South Beach Recipe Rescue

Well Marty and I have been working on some "Lifestyle Changes" and as part of that we have been trying to follow the South Beach Diet. It was recommended by my own doctor as a common sense approach exhibiting the most nutrition balance and success out there. We have found some of the issues hard, but overall I would now agree with my doctor as it is a pretty sane way to lose weight.

As part of that plan we have been sticking very close to the meal plans and recipes in Dr Agatston's books. Being a chef in my previous career, I have some issues with a few of his recipes, and I think there are some easy improvements, that are still within the guidelines of the diet plan. None of what I say here has been approved by the South Beach folks, so take my suggestions as you see fit. Over time I intend to add some recipes here that I think improve on the some of the ones in his cookbook.

The South Beach book offers a recipe for Oatmeal Pancakes that I found eatable, but frankly a little yucky. Here is a twist that I think will still satisfy his intention for the meal. Find your self Bob's Red Mill Oat flour in the health food section of most grocery stores. I found this recipe on the label there, and modified it with the eating rules of South Beach in mind. Add a couple strips of the South Beach approved turkey bacon, or Canadian Bacon and you will find this meal pretty satisfying for a special weekend breakfast.

Oat Meal Pancakes

This is a Phase Two recipe

Heat milk until hot, stir in Oats and let stand for 5 minutes.

Combine remaining dry ingredients in a mixing bowl and then add oat milk mixture.

Add egg yolks and oil into the mix.

Beat egg whites until stiff peaks form, then fold into batter. Makes eight, 4 inch pancakes. Use cooking spray on your non stick skillet.

Use a small amt of legal margarine, and sugar free syrup or sugar fee jam, and I am no expert, but I think you will still be in the legal eating rules for the diet plan at least for a special and occasional weekend breakfast.
